Gorging on garbanzos
My latest must-have-food is garbanzo beans (aka, chickpeas). Eating out recently during our move, garbanzo beans turned up in a couple salads and one meal and now I can’t get enough of ‘em. I thought I’d look up some recipes to find more ways to satisfy my new craving.
For years, the husband and I have been making hummus using this recipe from Rachel Ray as the baseline for what we whiz up in the food processor. And until recently that and falafel was all I thought garbanzo beans were good for. I did a little online searching and came up with a whole bunch more options.
This Cuban Garbanzo Bean Soup sounds amazing, especially with the addition of the chorizo.
I also like the look of these recipes:
- Garbanzo Bean Casserole
- Spicy Tomato Garbanzo Beans
- Garbanzo Bean and Zucchini Salad
- Indian Chickpeas
- Roasted Chickpeas
- Mediterranean Tuna Antipasto Salad
- Chickpea Burgers and Tahini Sauce
- Squash Chickpea and Red Lentil Stew
Then, I found a whole website dedicated to chickpeas.
I can’t wait to get started working through this list.
