So Easy and Soooo Good
I had a great visit at the dentist last week. Not only did I get my teeth cleaned, which I totally love, but I picked up a great recipe from my dental hygienist. We were talking about easy dishes to make for football watching parties and she shared with me her favorite.
This is a crock-pot recipe so dig out yours and fill it with three to four chicken breasts, a can of black beans (drained), a can of corn (drained) a can of Rotel (drained) and a package of cream cheese. Set it on low in the morning and come home to a pot of tasty goodness.
I questioned the lack of liquid in the pot and she said that it comes out perfectly without the liquids or added broth or anything. Still doubting her recommendations I didn’t drain the can of Rotel. But, she was totally right. Mine came out a bit soupy, but still incredibly good.
There are a variety of ways you can serve this creamy chicken delight. I had mine over rice and my husband had his with corn chips. My hygienist recommended it in a tortilla and I can see it being great in both corn and flour tortillas. This would also be great over noodles and would make an interesting variation on nachos too.
Of course the husband and I added some roasted green chili for extra flavor and as I am such a salt lover I added a bit of powdered chicken broth. I’m going to make this again and might try adding in two cans of beans to see how that turns out because I just love chicken with black beans. This is definitely going to be a new regular in our standard repertoire of easy meals to make.
