Cold weather means hot soup for dinner

SoupCold weather has come to Colorado and my taste for salads and lighter fare has left me. All I can think of are hot substantial soups.

Two weekends ago just before our first snow, the husband smoked two beer can chickens for us. After pulling off all the meat he decided to boil the carcasses. All the spices from the rub and the smoked flavor from the chicken mixed together to make the tastiest broth.
